Easy, Last Minute Dessert: Scotcheroos

If you’re like me, these past few weeks have flown by. It’s already the week of Thanksgiving and I can hardly believe it! If you’re in charge of dessert and have no idea what to bring or make… I have a fabulous recipe for you! You don’t have to show up with a store bought pie. You don’t have to spend 7 hours baking on Thanksgiving Eve or morning. You don’t even need an oven! This dessert is simple, easy, delicious, and a sure crowd pleaser! (Time it takes from start to finish: 20 minutes.)


What you’ll need:

-1 cup sugar

-1 cup peanut butter

-1 cup corn syrup

-6 cups Rice Krispies (or the knock-off brand works just fine!)

-1 bag chocolate chips

-1 bag butterscotch chips

What to do:

-In large saucepan, combine sugar and corn syrup. Heat to dissolve sugar and bring to boil; remove from heat.

-Stir in peanut butter. Add Rice Krispies and mix until well blended.

-Press into buttered 9X13 inch pan (Or whatever pans or dishes you have…I used an 8×8 dish and a cake pan because I couldn’t find my 9×13!)

-In small saucepan, melt together chocolate chips and butterscotch chips.

-Spread combined mixture over top of Rice Krispies mixture.

-Cool for 30 minutes to 1 hour. Cut into 36 bars. (I opted for bigger pieces and was able to get 24 good sized bars!)
