Stuffed Chicken with Sunroasted Tomatoes, Spinach & Feta Cheese

I’m so excited to share this easy & delicious recipe with you all! We are big fans of chicken here in the Garcia household- we have it multiple times a week since it’s the only meat Brooklynn will eat. I like to mix it up and add lots of goodies to our chicken, that way we don’t get bored with it! This recipe takes less than an hour from start to finish!

Stuffed Chickenwith sunroasted tomatoes, spinach & feta cheese

What you’ll need:

-Four large chicken breasts

-1/2 bottle Italian dressing

-1/2 cup sundried tomatoes

-1/2 cup chopped spinach

-1/2 cup feta cheese

-1/2 cup mozzarella cheese

What to do:

Marinade your chicken in the Italian dressing for 3-4 hours before starting. Preheat your oven to 375.

 

With a sharp knife, cut the chicken breasts open through the middle. Do NOT cut all the way through.

Open the chicken breasts and layer on the sundried tomatoes, spinach, feta and mozzarella cheese. Squish it in as much as you can and use toothpicks to stitch it together (so the ingredients don’t fall out).
  

Heat up a pan and sear the meat on both sides for about three minutes (or until it’s a little brown).

  

Take your chicken out of the pan and place it onto a baking sheet or whatever you want to bake it on!

Cook it until the center reaches 165ºF on a thermometer. For me, that was around 25 minutes.
